Crispy Peanut Tofu Skewers

Peanut Butter on everything please

Using peanut butter in cooking as well as baking should be shouted from the rooftops. Before eating a plant based diet I had never experimented with peanut butter in savoury dishes. (I’ll post a recipe soon for a sweet potato and peanut butter curry, one of our favourites!). But my oh my, I had been missing out. It adds so much deliciousness.

Tofu is a tough one to crack in terms of making it actually taste of something, but I think I may have cracked it. The combination of peanut butter, sesame, soy and chili and then corn flour to allow the sauces to stick is wonderful. You can put your tofu into soak whilst you do other things/shower in my case. Using a smoked variety also adds to the flavour, which I have used in this case.

Making chicken kebabs was a common meal I’d cook if I was having guests over as everybody likes them, they’re healthy and so easy to prepare and cook. Well it’s the exact same in this case. 0 skills are required for this dish. And what’s great is, you can serve the skewers with nice additional extras and let everybody help and plate up the food themselves. Perfect if you are entertaining a group.

takes approx. 40 minutes in total.

Ingredients
For the crispy tofu
1 block of tofu(I used smoked tofuu, this doesn’t need pressing/drying)
2 tablespoons of sesame oil

2 tablespoons soy sauce
1/2 a teaspoon chili sauce
40 g smooth peanut butter
2 teaspoons of cornflour

2 tablespoons of water

For the rest
1 red pepper (cut into chunks)
1 green pepper (cut into chunks)
1 red onion (cut into chunks)
7 mushrooms (I used closed cup white mushrooms, halved)
1 courgette (sliced into chunks)

Served with
80g couscous cooked in 200ml of vegetable stock

Method
1. In a mixing bowl, add your sesame oil, soy sauce, chili say, peanut butter and cornflour. Combine.
2. Cut your block of tofu into cubes and marinate in the sauce. Turn frequently and let soak for about 15 minutes.
3. Preheat oven to 180°C/350°F.
4. Using skewers, assemble your tofu and vegetables in order of choice.
5. Place skewers on a tray and bake in oven for 25 minutes.
6. Whilst the skewers are cooking, cook your couscous on the hob.
7. Serve and enjoy!
