back with more breakfast cookies
My previous recipe ‘healthy protein breakfast cookies’ https://whatluceeats.wordpress.com/2018/03/14/healthy-protein-breakfast-cookies/ was a great success and it delights me to know you are recreating my recipes and enjoying them as much as I do.
Which can only mean that different versions are needed surely. This time using a vanilla protein and adding in some blueberries. These cookies are filled with goodness and have an amazing nutritional content. Super easy to mix together and shove in the oven whilst you jump in the shower, they are perfect to enjoy with fruit and yoghurt, or just as good to enjoy on the go. Warm guilt free cookies for breakfast. Does it get much better? I look forward to your opinions on these ones!
Makes 4 breakfast cookies
takes approx. 15 minutes in total.
For the cookies
20g of vanilla vegan protein of choice (I use missfitsnutrition, you can buy individual sachets from Holland and Barrett)
30g porridge oats (gluten free if required)
1 mashed banana
a bit of dairy free milk (if you need, I used unsweetened almond milk)
handful of blueberries
For the rest
yoghurt (I used alpro plain)
1.Preheat oven to 180°C/350°F..
2. In a mixing bowl, combine your oats, protein powder and mashed banana.
3. Fold in your blurberries and form your mixture into small balls and flatten them on a lined baking tray. Add a bit of milk if they are too sticky.
4. Bake in the oven for 10 minutes.
5. Serve with whatever you desire.
