simple, crispy and tasty
Full of Vitamin A, sweet potatoes are bursting with nutritional goodness and flavour. These rostis are super easy to make and are delicious on their own as a snack or a starter.
They take virtually no time to prepare and cook so they are perfect for evenings when you’re in a rush. Substitute the flour for gluten free, and omit the corn flour to make this dish gluten free. Although be aware the corn flour adds a bit of crisp and crunch.
Chilli flakes to add some kick, and green pepper to add more colour and crunch, I hope you enjoy these rostis as much as we did.
makes 8 rostis
takes approx. 15 minutes in total.
200g sweet potato (grated)
½ white onion (diced)
½ green pepper (diced)
2 tablespoons of cornflour
2 tablespoons of flour (gluten free if requires)
¼ teaspoon of chilli flakes
3/4 teaspoon of paprika
1 clove of garlic
Oil of choice for frying (I used coconut spray)
Water (if needed)
1.Squeeze the excess water out of the grated sweet potato.
2.Then, mix all of the ingredients together in a bowl, adding some water if the mixture is too dry.
3.On a medium heat, add your oil of choice to a pan and shape your mixture into patties.
4.Add them to your pan and fry on each side for approx. 6 minutes until golden brown. Watch to not let them burn.
