Healthy Raspberry Oat Bars

A dessert without chocolate from me? very rare I know, but I love chocolate and have to have it every day – it’s a staple in my diet. But time for a fruity non chocolate dessert, snack or even breakfast.

The main ingredients in these bars are oats, nuts and raspberries making these nutritious!

For the jam filling I use frozen raspberries, mainly because they are cheaper! But fresh raspberries are fine. Chia seeds are added to add protein and an extra crunch. This jam is healthier than shop bought jams as the ones you buy in shops are normally crammed with sugar and other preservatives.

Pretty simple in the quantity of ingredients used. With the same ingredients in both top and bottom layers of the bars, just different consistencies.

Makes 9 bars
takes approx. 45 minutes in total.

Ingredients
For the bottom layer
90g oats (gluten free if required)
45g almonds
45g hazelnuts
1 tablespoon of coconut sugar
75ml coconut oil (melted)
Pinch of salt

For the Raspberry Chia Jam layer
300g of raspberries (fresh or frozen)
2 teaspoons of chia seeds
2 tablespoon of water

For the top crumble layer
30g almonds
25g hazelnuts
90g oats (gluten free if required)
1 tablespoon of coconut oil (melted)
2 tablespoons of maple syrup

Method
1. Preheat oven to 180°C/350°F, and line a 8″ x 8″ tin with parchment paper or grease if the base is detachable.
2. In a food processor add your almonds and hazelnuts for the bottom layer and blitz until a fine meal is formed.
3. Add your bottom layer oats, coconut sugar, salt and bottom layer coconut oil and blitz again until combined.
4. Empty the mixture into your baking tin and spread evenly. Place in oven for 10 minutes.
5. Whilst your bottom layer is baking, make your chia jam but simmering on a medium heat your raspberries and added water. Combine thoroughly and simmer until a jam like consistency is formed.
6. Add your chia seeds and mix well.
7. Take your bottom layer out of the oven and let cool with your jam whilst you make the top layer.
8. Add your almonds and hazelnuts for the top crumble layer to your food processor and blitz. You want the mixture to be chunky so you can crumble it on top.
9. Add your oats, maple syrup and coconut oil and mix until just combined.
10. Spread your chia jam on the bottom layer and spread evenly.
11. Then crumble your top layer mixture on top and place in oven for 20 minutes.
12. Let cool before cutting into bars.

Notes
Goes well with alpro vanilla ice cream!
store in an airtight container in a cool dry place.
