You put sweet potato in your toaster?!
The brunch of dreams. And all you need is a toaster. So many sweet and savoury combinations can be made but here are a few of my favourite which I usually enjoy on bread.
This is perfect for the coeliac’s out there who can’t enjoy normal bread. And I don’t care what you all say, gluten free bread just isn’t nice. So try all your favourites on sweet potatoes instead.
A healthy breakfast, brunch, lunch, linner whatever you want to eat these for. They do take a little longer than bread to toast, so depending on your toaster they will need approx. 3 toasts. Then simply top with your favourite toppings and enjoy.

takes approx. 20 minutes in total.
1 large sweet potato
Avo and Chilli
1/2 an avocado (cut into chunks)
sprinkle of chilli flakes
PB and Banana
Spoonful of peanut butter
1/2 a banana (sliced)
sprinkle of cacao nibs
Yoghurt and Bloobs
Dollop of dairy free yogurt (I used alpro plain)
Handful of blueberries
sprinkle of desiccated coconut/chia seeds
1. Wash and cut the ends of your potato off, and then cut into slices approx. 1/2 inch thick.
2. Place the slices in the toaster and toast until cooked. This should take a few cycles.
3. Top each piece with the above combinations and devour.
