Cacao Coconut Bliss Balls

this cacao and coconut combo can’t be missed!

5 simple healthy ingredients. Good fats from the coconut, protein from the walnut and fibre from the oats. Each component benefits your health in someway!

These bliss balls are perfect for on the go snacks, especially when you need a little pick me up. 11am and 4pm if you’re anything like me. They contain no refined sugars or nasty bits, and are naturally sweetened by dates which contribute to the binding together of the ingredients.

The cacao and coconut compliment each other beautifully together with the walnuts. Feel free to use any other type of nuts if you don’t have walnuts to hand. As long as you use the same quantity you can’t go wrong.

makes approx. 16 balls
takes approx. 30 minutes

200g dates (soaked in boiling water for 15 minutes)
60g walnuts (or any other nut)
30g desiccated coconut (and extra for rolling)
70g oats (use gluten free if required)
2 tablespoons of cacao powder

1. In a food processor add your drained dates and blitz until a paste begins to form. You might need to scrape down the sides a couple of times.
2. Next add your walnuts (or other nut), oats, desiccated coconut and cacao powder. Blitz until all combined.
3. On a baking tray lined with parchment paper, roll your mixture into approx. 16 25g balls and then roll in desiccated coconut to finish.
If the mixture is too sticky to roll, wet your fingers before each roll.

Store in fridge and consume within 2 weeks.
