Luce’s Breakfast Bars

Naturally sweetened by dates and goji berries, here we have the perfect healthy breakfast bar. These are chewy, delicious and so much healthier than shop bought granola bars which are often laced with refined sugars.

These are perfect for those who need breakfast which can be grabbed and demolished within seconds on those busy mornings. They are free from gluten (if you use GF oats), dairy and refined sugars.

takes approx. minutes

Ingredients
200g medjool dates
60g goji berries
50g of pumpkin seeds
25g cacao nibs
25g chia seeds
75g of puffed rice
75g of oats (gluten free if required)
1/2 teaspoon of cinnamon (optional)

20g desiccated coconut

Method
1.Preheat oven to 180°C/350°F and line an 8″ x 8″ square tin or 20cm circular tin with parchment paper or grease with coconut oil.
2. In a pan over a medium heat add your dates and cinnamon. Cover with 200ml of water and let simmer for 5 minutes. Take off of the heat and beat with a fork/mash until a paste is formed.
3. Empty your date paste into a large mixing bowl and add the rest of the ingredients.
4. Combine the mixture. I find it easier to use hands.
5. Empty mixture into your tin and bake for 25 minutes before leaving to cool then cutting into bars.

Notes
Store in an airtight container and consume within 5 days.
