Chocolate Courgette Bread

another bizarre bake

Please don’t be alarmed, but yes this chocolate bread does contain courgette. Meaning it’s healthy right?

No bananas are used in this recipe, therefore an ingredient was needed to make the similar consistency, which the grated courgette does very well. It adds moisture and denseness to the bread and is completely tasteless trust me.

This bake is so easy to make, just throw everything into a bowl, mix together and shove in the oven. Okay maybe be a little more delicate. No eggs, dairy or gluten (sub in GF oats and flour) are found in this bread so anyone can eat!

Makes 1 loaf
takes approx. 45 minutes

120g oat flour (oats blitz in food processor, use GF if required)

30g flour (GF if required)
50g cacao powder
1 teaspoon of baking powder
1/4 teaspoon of salt
25g coconut sugar
130g of grated courgette
90 ml dairy free yoghurt (I used alpro coconut)
40ml coconut oil
1 teaspoon of vanilla extract
45g dairy free chocolate chips (plus more for topping)

1.Preheat oven to 180°C/350°F, and grease a loaf tin.
2. In a large mixing bowl combine all of the ingredients apart from the chocolate chips.
3. Fold in your chocolate chips and empty mixture into loaf tin.
4. Top with a few more chocolate chips and bake for approx. 20 minutes covered and then 20 minutes uncovered. A toothpick should come out clean.
5. Let cool before taking out of tin.

Store in airtight container and consume within 5 days.
