Blueberry Protein Ice Lollies

getting full use of these ice lolly moulds before the hot weather disappears

It’s not cooling down is it? Not that I’m complaining…

So another fun and easy dessert/snack or even breakfast, that will cool you down and keep you refreshed. I’ve incorporated some of Whey Box Vegan Blueberry Protein for extra protein and flavour, but feel free to make the lollies without. They will still have a lovely blueberry flavour.

Makes 6 lollies
takes approx. 2 hours

Ingredients
300ml of coconut milk (approx. 3/4 of 1 can)
2 tablespoons of maple syrup
1 teaspoon of vanilla extract
150g blueberries
1 sachet of wheybox vegan blueberry protein (optional)

Method
1. In a food processor add your coconut milk, maple syrup, vanilla extract and protein powder (if using). Blitz until combined.
2. Next add your blueberries and blitz. You want to keep some bits in so don’t over do it.
3. Pour into ice lolly moulds and put in freezer for 2 hours.
4. Remove from moulds and enjoy!

Notes
Store in freezer
