Crispy Tofu Masala Tacos

Masala flavours in tacos? Excuse me..

Oh it works so so well. The tofu is perfectly crisp and compliments the peppers and onions inside.

The combination of spices gives a ‘masala’ taste and the dressing adds to the spice.

These tacos are free from meat and dairy and can be free from gluten if you use GF tortillas. They are perfect for cooking for large groups as you can throw everything on the table and let people build their own tacos.

Feeds 2 people
takes approx. 30 minutes in total.

Ingredients
For the tofu
1 block of firm tofu (I used smoked tofoo for added smoky flavour)
1 tablespoon of corn starch
1 teaspoon of cumin
1 teaspoon ground coriander
1 teaspoon of garlic granules or powder
1 teaspoon of paprika
1/2 teaspoon of chili powder
1/2 teaspoon of garam masala
1/4 teaspoon of ground ginger
3 tablespoons of oil of choice

For the rest of the tacos
4 large or 8 small tortilla wraps
1 green pepper (sliced)
1 red pepper (sliced)
1 yellow/orange pepper (sliced)
1 large/2 small red onion (sliced)
1/2 teaspoon of cumin
1/2 teaspoon of ground coriander
1/2 teaspoon of paprika
1/2 teaspoon of garam masala
Coriander to garnish

For the dressing
150g of cashew nuts (soaked in boiling water for minimum 30 minutes (the longer the better))
200ml water
Juice from 1/2 a lemon
1/2 teaspoon of salt
1/4 teaspoon of chilli powder
1/4 teaspoon of garlic granules or powder
1/2 teaspoon of garam masala

Method
To make the tofu
1. Preheat oven to 180°C/350°F.
2. In a bowl add your corn starch, cumin, ground coriander, garlic granules or powder, paprika, chili powder, garam masala, ground ginger and oil of choice
Combine thoroughly.
3. Next cut your tofu into small chunks and empty in your bowl with the seasoning. Mix well.
4. On a lined baking tray, add your tofu and spread out evenly.
5. Bake in oven for 15 minutes. Keep an eye on the tofu to ensure it doesn’t burn. Toss and stir the tofu halfway through.

To make the rest
1. In a saucepan on a medium heat, add a drizzle of oil followed by peppers and onion.
2. Next add your spices and combine thoroughly.
3. Cook for a few minutes stir occasionally, before removing from heat.

To make the Dressing
1. Simply blitz all of the dressing ingredients together and voila!

To finish
1. Fill your tortilla wraps with your tofu and top with your peppers and onion. Drizzle with your dressing and garnish with coriander.
