Cookie Sandwiches

oh wow we have a winner here

Gluten and dairy free. These cookie sandwiches are quick and easy to make and taste amazing. Especially dunked in a cuppa tea.

The peanut butter filling is creamy and delicious and the crunch of the cacao flavoured biscuits compliments the nut butter so well. Finishing off with the chocolate and hazelnut coating.

Makes 10 cookie sandwiches
takes 1 hour in total.

For the Biscuits
150g oat flour (ground oats in food processor)
60g almond flour (ground almonds in food processor)
100ml maple syrup
30g cacao powder
35g coconut sugar
2 tablespoons of coconut oil

For the Filling
160g smooth peanut butter
70ml coconut oil
1/2 teaspoon of vanilla extract
225g of icing sugar
70ml almond milk

For the Decoration
Dairy Free Dark Chocolate
Chopped Hazelnuts

For the Biscuits
1. Preheat oven to 180°C/350°F.
2. In a mixing bowl combine all ingredients for the biscuits, ensuring there are no lumps.
3. In between two pieces of baking paper empty your mixture, and roll with a rolling pin until a few mm thick.
4. Using a cookie cutter cut into approx. 20 circles and place on a lined baking tray.
5. Bake in oven for 10 minutes, before taking out, flipping over and baking for a further.

For the Filling
1. In a saucepan over a medium heat melt your coconut oil and peanut butter until smooth and combined.
2. Then pour into a mixing bowl with the icing sugar, almond milk and vanilla extract. Whisk/Stir until combined.
3. Place in fridge to thicken for approx. 10 minutes, before emptying into a piping bag. (alternatively if you don’t have a piping bag, just spoon the filling on! it just won’t be as neat)
4. Load one side of your biscuit up with your filling and place the other side on top.
5. Place in fridge for 10 minutes.

To finish
1. Melt your dark chocolate and dunk your biscuits into the chocolate and then coat with chopped hazelnuts.
2. Place back in fridge to set for 10 minutes.

Store your biscuits in an airtight container.
