Have you ever tried jackfruit?
So Tom regularly comes back from the shop with vegan surprises, usually in vego bar form when he comes home from the pub. Knows the way to my heart! Last week he came home with a couple of packs of Uptons Bar-B-Que Jackfruit. I had seen it in Sainbury’s before and been intrigued. Since turning vegan I have only ever tried Jackfuit once, and that was at a restaurant. I wasn’t too impressed, hence why I hadn’t tried it since. But the idea of it in a dreamy BBQ sauce and in a burger was now appealing to me, plus I was intrigued how to cook it. Turns out it couldn’t be any easier!
So here are my jackfruit burgers, which are so easy to make, contain no meat or dairy and contain a delicious homemade vegan coleslaw. These burgers can be whipped together in no time at all, perfect for those hungry mouths.

2 packs of Uptons Bar-B-Que Jackfruit
8 burger buns
For the Homemade Avo Coleslaw
130g red cabbage (shredded)
200g white cabbage (shredded)
60f carrot (grated)
1 granny smith apple (shredded)
the juice of 1 lemon
1 teaspoon of maple syrup
salt and pepper
1. In a saucepan on a medium heat, add a drizzle of oil and add your jackfruit.
2. Cook for 8-10 minutes, stirring occasionally.
To make the Homemade Avo Coleslaw
1. Mash your avocado so it becomes almost guacamole like, and add the lemon juice, maple syrup, salt and pepper. Combine.
2. Next add your shredded purple and white cabbage, carrot and apple and combine until evenly coated.
