Dairy Free Peanut Butter Banana Nice Cream

okay so you NEED to try this

No fancy ice cream making equipment needed here kids, just a helping hand from your freezer and some patience.

Frozen bananas and coconut cream make the base of the ice cream, making it free from dairy and eggs. Your banana slices need to be frozen before you combine them with the other ingredients, so make sure you have popped then in the freezer for a couple of hours before you begin.

Nice cream is dairy free ice cream made from frozen bananas, which in my opinion, go hand in hand with the almighty nut butter of peanuts. The chocolate chips give the nice cream a bit of crunch and add to the texture.

So no hidden sugars in there and no nasty binding ingredients. Give this nice cream a go, and let me know what you think!

takes approx. 5 hours in total

3 frozen bananas
250ml coconut cream
1 teaspoon of vanilla extract
3 tablespoons of maple syrup
150g smooth peanut butter
60g dairy free chocolate chips

1. Peel and cut your bananas into slices and place in the freezer for a couple of hours.
2. In a food processor add your coconut cream, vanilla extract, maple syrup, frozen banana slices and peanut butter. Blitz until thoroughly combined. You don’t want any banana lumps.
3. Empty the mixture into a bowl and fold in your chocolate chips.
4. Next empty your mixture into a metal dish (I used a banana loaf tin), and place in freezer uncovered for 3 hours.

Store in freezer. Let soften before serving.
