3 Ingredient Peanut Butter Energy Bites

quick, easy, healthy snack

3 simple ingredients. Peanut Butter, Oats and Dates. Making these bites perfect for a healthy snack or dessert, especially when you’re on the go.
No baking is required and swap the oats for gluten free if need be.

The combination of the sweet dates and savoury smooth peanut butter work so well together. I need to think of some more desserts I can combine the two together in.

No baking required, these bites are dairy, egg and refined sugar free. Just not suitable for those with nut allergies obviously – sorry! There are plenty of other nut-free dessert and snack recipes up on my blog that you can enjoy.

Makes 16 bites
takes approx. 45 minutes in total.

Ingredients
250g dates (soaked in boiling water for 15 minutes and drained)
130g smooth peanut butter
50g oats

Method
1. In a food processor blitz your dates until a paste is formed.
2. Then add your oats and peanut butter and blitz again until combined.
3. Line a baking sheet with parchment paper and roll your mixture into 20 ball shaped bites. Wet your fingers to roll, if the mixture is too sticky.
4. Place in freezer to set. This should take approx. 30 minutes.

Notes
Store in fridge and consume within 10 days.
