Luce’s Better Breakfast Series

I am very excited to present this delicious berry breakfast bowl. The Real Handful are running a Better Breakfast Series this month, working with two other well known brands.

The oats are made from barley so completely wheat free. They’re organic, high in fibre and contain no added sugar. Making them the perfect porridge component to start the day.

and wow hello Innocent bringing out dairy free milks along with their various other products. I had seen this in the shops and was so intrigued as to how it would work in a bowl of porridge. Wow was i pleasantly surprised? It helped make them creamy and mixed perfectly.

Onto the toppings, I was kindly gifted a huge box of loads of the Real Handfuls treats. I’m slowly working my way through them and they’re proving to be the perfect snack for on the go, and the perfect sized sachets to use as porridge toppings. This Berry Blast sachet is made up on dried fruits and nuts They’re vegan friendly, high in fibre and again contain no added sugars.

So this big bowl of deliciousness is how we should all be starting our days i’ve decided. Get your fibre in early doors and this will kick start your day and keep you feeling full til lunch. Hearing some pretty bad stats about how little fibre we eat as a nation, has made me extra conscious to ensure i’m getting enough in. Bowls like this are so easy to make, and will ensure you’re getting closer to your fibre goals.

Makes 1 bowl
takes approx. 8 minutes in total.

Ingredients
For the porridge mixture
60g of Rude Health Naked Barley Porridge
125ml Innocent Oat Milk
1/2 mashed banana
handful of mashed blueberries

For the toppings
RealHandful Blackcurrant Blast
1/2 banana
handful of blueberries

Method
1. Turn your hob to a medium heat and in a pan add your oats, mashed blueberries, banana, and oat milk.
2. Combine thoroughly and stir every couple of minutes ensuring the oats don’t start to stick to the bottom of the pan.
3. After approx. 5 minutes empty your porridge into a bowl, top with your real handful pouch, banana and blueberries.

Notes
To make these into overnight oats, simply combine all of the porridge ingredients into a Tupperware container or jar and put in fridge over night (no hob or cooking required). Add your toppings in the morning.
