2 Ingredient Peanut Snack Bars

Hands up if you love Nakd Peanut Bars?

What if I told you, you could recreate them for a fraction of the price in 30 minutes. And all you need is peanuts and dates!

Gluten and fuss free, these bars are completely vegan and require no baking. Literally add soften dates to a food processor with peanuts, press blitz and voila. It literally couldn’t be any easier. They’re the perfect mid-morning, mid-afternoon or pre/post workout snack. And containing natural ingredients, they’re packed with healthy fats. Which our bodies need need need!

You might think dates come at a price, but if you’re from the UK, go to Holland and Barrett and grab yourself these . They’re 99p a pack, and just need to be soaked in boiling water for 10 minutes or so to soften them up, and you’ll be away! Just remember to drain them before you put them in anything (yes i’ve forgotten a few times!)

Keep a batch of these bars in your freezer, and they’ll be your saviour when you need a lil pick me up. Plus they can be eaten straight from the freezer. It literally doesn’t get any easier….

makes 12 bars
takes 30 minutes

Ingredients
400g dates (soaked in boiling water for 10 minutes and drained)
360g plain peanuts

Method
1. Add dates and peanuts to a food processor and blitz until combined. You want to keep some chunks in your peanuts.
2. Empty mixture into a greased baking tin, flatten down and pop in the freezer for 30 minutes.
3. Cut them into 12 bars and enjoy!
