Sausage rolls but better!

Another jackfruit recipe, but this time using Nature’s Charm BBQ Jackfruit. Adding extra fibre by combining with black beans the filling needs to be prepared in advance to allow time in the fridge. It can be made the night before or just make sure it get’s at least an hour in there.

Surrounded by flakey gorgeous puff pastry and glazed with a maple-dairy free milk combo. These are a wonderful picnic accompaniment or a quick and easy snack or lunch idea. Tom who isn’t the biggest jackfruit fan was converted by these!

A tastier alternative to vegan sausage rolls. The BBQ jackfruit is so so tasty filled between the puff pastry. Perfect for a buffet or entertaining guests, or just as an easy peasy bite to eat.

Ingredients

  • 1 teaspoon of olive oil

  • 1 white onion (diced)

  • 2 cans of nature’s charm BBQ jackfruit

  • 1 can of black beans (drained and rinsed)

  • 1 teaspoon of soy sauce

  • 1/2 teaspoon of salt

  • 1 teaspoon of tomato puree

  • 2 rolls of vegan puff pastry

  • 2 tablespoons of dairy free milk

  • 2 tablespoons of maple syrup

  • Sesame seeds

Directions

  • Begin by heating a saucepan on a medium heat. Add the oil and diced onion and cook for a few minutes until the onion becomes translucent.
  • Add the jackfruit, black beans, soy sauce, salt and tomato puree and cook for 5 minutes.
  • Now add to the mixture to a blender and pulse for a few seconds. Place the mixture in thefridge to cool and firm for 1 hour.
  • After an hour preheat the oven to 180c and line two baking trays with baking paper.
  • Roll out the 2 rolls of puff pastry and cut them both in half lengthways. Now split the jackfruit mixture between four and place down the middle of the four pieces of pastry.
  • Carefully fold the pastry over the jackfruit and seal closed. Cut each pastry log into 4 and turn the rolls over when you place them on the baking trays.
  • Next combine the milk and maple syrup in a small bowl and brush the rolls with it.
  • Sprinkle with sesame seeds and bake in the oven for 25 minutes. Serve with dips of choice.
