Black Bean Brownie Loaf with Strawberry, Banana and Pistachio Snack Mix

Brownie topping heaven has arrived! 

Brownies in any shape or form are delicious so why not make them in a loaf and top them with Nature’s Heart  Strawberry, Banana and Pistachio Snack Mix. They have just launched the most gorgeous range of sweet and savoury superfood snacks. Trail mixes, dried fruits, glazed mixes and chocolate covered fruits. You name it – there’s a snack for you. 9 to be precise.

This bake also includes their coconut flour, caca and chia seeds, which are the best in the business. And I’m not being biased. The quality is second to none.

Black beans add fibre, protein and work as a lovely binder in this recipe. They also add a nice denseness. And don’t panic, you can’t taste them. The chocolate overpowers!

Drizzling peanut butter over the loaf before pushing the snack mix on adds extra oomph, and you can never have enough peanut butter right? This loaf takes minutes to prepare, so ready set bake!

takes approx. 1 hour

Ingredients

40g plain flour

40g Natures Heart coconut flour

3 tablespoons of Natures Heart cacao powder

1 tablespoon of Natures Heart chia seeds

80ml maple syrup

60g smooth peanut butter plus more for drizzling

2 teaspoons of vanilla extract

1/2 teaspoon of baking powder

1 can of black beans (drained and rinsed)

150ml dairy free milk

80g dark chocolate chunks

2 bags of Natures Heart Strawberry, Banana and Pistachio Snack Mix

Method

  1. Preheat oven to 180c and line a loaf tin with parchment paper. I used a 1lb loaf tin.
  2. Add the black beans, maple syrup, peanut butter, vanilla extract and milk to a food processor and blend until smooth.
  3. Empty into a large bowl and mix in the plain flour, coconut flour, cacao powder, chia seeds, and baking powder.
  4. Save a handful of chocolate chunks to one side and fold the remainder into the brownies.
  5. Empty the mixture into the loaf tin and flatten down.
  6. Drizzle some extra peanut butter on top.
  7. Next combine the handful of chocolate chunks with the bags of snack mix and push into the brownie loaf.
  8. Bake in the oven for 35 minutes before allowing to cool slightly and removing from the tin and slicing. Enjoy!
