I have never typed a recipe up to put on here so quickly!
You lot went mad for these brownies yesterday when I uploaded a BTS in my instagram stories. I knew Bourbon biscuits were mine and my brothers favourites, but I didn’t realise there is a whole army of bourbon obsessed people out there!
So here they are. Gooey fudge brownies with a biscuit crunch on top. There’s not really much more to say haha. They’re vegan, delicious, perfect with a cuppa. Oh and I can confirm they’re a brilliant pre workout. I was full of beans after eating one whilst working out on FaceTime with my darling mother.

Bourbon Biscuit Brownies

180g self raising flour

30g cacao powder

50g Bourbon biscuit crumbs (blended or bashed with rolling pin)

70g light brown sugar

70g caster sugar

160g melted dark chocolate

250ml oat milk

1 teaspoon of vanilla extract

70ml dairy free yoghurt

80g dark chocolate chunks/chips

150g Bourbon biscuits
Directions
- Preheat oven to 180c and line a square or rectangular baking dish.
- In a bowl combine the flour, cacao powder, bourbon crumbs, light brown sugar and caster sugar.
- Add the melted chocolate, oat milk, vanilla extract and yoghurt. Combine.
- Fold in the chocolate chips and pour the mixture into the lined dish.
- Smooth out and then push the Bourbon biscuits into the mixture. Bake in the oven for 45-50 minutes.
- Allow to cool slightly before removing from the tin and cutting into squares. They’ll be quite gooey in the middle but that’s the best part!
Notes
- Store in an airtight container in the fridge and consume within 5 days.
