The best of both worlds – cookies and pizza combined!

This cookie pizza is so simple to make and is the perfect family dessert for the special times you catch up and gather round the dinner table. I used some sauce within the cookie to make it extra caramel-ly inside as well as more drizzle on top. Topped with vegan marshmallows and melted dark chocolate this dessert is a serious game changer. Chocolate Caramel Cookie Pizza

Ingredients

2 flax eggs (2 tablespoons of ground flaxseeds combined with 4 tablespoons of water left to sit for 5 minutes)

250g wholemeal flour

150g dairy free butter

80g light brown sugar

60g dark chocolate chips

1 teaspoon of baking powder

1 teaspoon of vanilla extract

60g Natures Charm Coconut Caramel Sauce plus more for drizzling

50g vegan mini marshmallows

40g dark chocolate (melted)
Directions
- Preheat oven to 180c and grease or line a circular cake tin.
- In a large bowl combine the flour, sugar and baking powder.
- Next add the butter and using your hands combine until a crumb like mixture is formed.
- Add the flax eggs, vanilla extract and coconut caramel sauce and combine until the mixture
forms a dough. - Fold in the dark chocolate chips and empty the mixture into the cake tin.
- Flatten the mixture down and place a few more chocolate chips in the top.
- Bake in the oven for 25 minutes before turning the oven off.
- Add the marshmallows on top and place back in the cooling oven for 5 minutes.
- Next carefully remove the cookie pizza from the tin, and drizzle with some more coconut caramel sauce and the melted dark chocolate.
- Slice up and enjoy!
Notes
- Best eaten straight away but store the leftovers in an airtight container in the fridge. Consume within 3-5 days.
