Another gorgeous grill-able dish…
This time with the most delicious peanut-ty sauce you can imagine. I absolutely LOVE peanut butter as you can probably tell from a lot of my recipes. So when I was put the task of creating another dish using my George Foreman Grill I knew that I wanted to find out how well tofu skewers could be grilled.
And I can confirm, they grill wonderfully. I always opt for smoked tofu if I can get my hands on some, because it gives the tofu a bit more taste than the norm. But that’s just my preference, and the satay sauce makes this dish so using plain tofu is absolutely fine.
This dish is so easy to make, and can be served up as an appetiser or a nice snack. See my note at the bottom of the recipe for an idea to make this into a complete meal. You won’t be disappointed!
So overall, I am over the moon with my new kitchen gadget. I can’t wait to grill to my hearts content and I will keep you updated on what I grill next.
takes approx. 20 minutes
serves 3-4 people
Ingredients
2 blocks of extra firm tofu (cut into square)
wooden skewers
2 tablespoons of sesame oil
150ml coconut milk
4 tablespoons of smooth peanut butter
2 tablespoons of soy sauce
1/2 teaspoon of garlic granules or powder
juice from 1/2 line
handful of crushed peanuts
Method
- In a saucepan over a medium heat, add the coconut milk, peanut butter, soy sauce, garlic granules and lime juice.
- Stir occasionally for a few minutes before everything is melted and combined.
- Empty into a serving dish, and garnish with crushed peanuts. Leave to one side.
- Next, load your tofu cubes onto wooden skewers and brush each side with the sesame oil.
- Turn on your George Foreman grill and place the skewers onto it.
- Close the lid and let grill for 8-10 minutes until they are golden and charred.
- Serve alongside your satay sauce.
NOTE – should you want to turn this into a complete meal, I love adding the tofu to noodles, peppers, edamame beans and mange tout (or veggies of your choice). Simply mix the satay sauce throughout, and voila you have a delicious lunch or dinner.
