Are you ready for 5 gorgeous recipes?

You may or may not remember I teamed up with the lovely bunch at Oatwell last year to make a bunch of recipes using their oat bran powder and gorgeous crispy hearts. 

OatWell is natural oat bran. It contains high concentrations of valuable beta-glucans, soluble fibres, which are found naturally within oats. Oat beta-glucan affects blood cholesterol levels. I learned last year that you don’t have to be in the older generation category to suffer with high cholesterol. It can affect younger people too!

Their products are designed that 1 serving of any product in the range contains 3g of oat beta-glucan. The 3g stimulates the production of bile acids. Bile acids are composed of cholesterol. Circulating cholesterol is thus used up and less cholesterol enters the blood stream. OatWell products can be used as part of a healthy diet as a manner of naturally lowering a slightly raised blood cholesterol level. 

That’s the amazing facts about the brand and how the products work, so now back to the recipes. Since we last worked together they have added 2 new exciting products to the range, in the form of snack bites. In cacao and coconut flavours. They are absolutely delicious to eat on their own, but also perfect to incorporate into recipes which is where I come in.

I used both the crispy hearts and coconut snack bites in this rocky road recipe. Rocky road is one the easiest recipes to make, and is great for getting all of the family involved. This recipe is vegan using dark chocolate and dairy free butter. The crispy hearts and snack bites add a lovely crunch and the coconut flavour pairs up so well with the chocolate.

A gorgeous rocky road which is free from dairy and packed with Oatwell goodness. This is super quick and easy to make so get the whole family involved!

Ingredients

  • 400g dark chocolate

  • 90g dairy free butter

  • 3 tablespoons of maple syrup

  • 2 bags of Oatwell crispy hearts

  • 2 bags of Oatwell coconut snack bites

  • 70g chopped pistachios

  • 70g vegan mini marshmallows

  • 80g raisins or sultanas

Directions

  • Begin by lining a rectangular baking tray with parchment paper.
  • Now melt the chocolate and the butter and combine with the maple syrup.
  • Put a handful of the crispy hearts, halved coconut snack bites, chopped pistachios,
    marshmallows and raisins to one side and fold the rest into the chocolate mixture.
  • Empty the mixture into the tin and flatten down. Now top with the leftover
    ingredients and carefully push them in.
  • Place in the fridge for an hour to set before removing from the tray and cut into
    squares. Enjoy!

Notes

  • Store in an airtight container in the fridge, and consume within 5 days.
